Quick Pasta Dishes

If you are planning a camping holiday this year or any other holiday where your cooking equipment may be limited then here are 3 simple pasta dishes that everyone will enjoy!

Simple Pesto Penne

Large bunch of basil leaves

Handful almonds roughly chopped or ground almonds

2 cloves garlic, finely chopped

A few glugs of olive oil

Salt & black pepper

Grated parmesan

Fusilli or pasta of choice cooked as per pack instructions

Roughly chop the basil leaves and mix with the almonds, garlic and olive oil. Season with some salt and pepper. Mix through the cooked pasta adding more olive oil if necessary. Put into a serving dish and top with lots of grated parmesan and serve!

Gnocchi Bolognese

1 tablespoon olive oil

1 onion, finely chopped

500g beef mince

2 cloves of garlic, finely chopped

1 tablespoon dried oregano

500g tomato passata

Salt & black pepper

500g gnocchi (make sure it contains at least 70% potato), cooked as per pack instructions

Grated parmesan

  1. Heat the olive oil in a large frying pan or pot.
  2. Add the onion and cook gently for about 5 minutes until soft but not coloured.
  3. Add the mince and garlic and cook stirring frequently until the mince is browned all over.
  4. Add the dried oregano and the passata. Season well and simmer for a further 10-15 minutes.
  5. Mix through the cooked gnocchi. Serve with lots of grated parmesan over the top.

Penne Genovese

Baby potatoes, sliced and boiled until cooked

Green beans, cooked (I put in with the potatoes about 3 minutes before the end of cooking)

Jar of green pesto (or homemade)

Fusilli or pasta of choice cooked as per pack instructions

Salt & black pepper

Grated parmesan

Mix the pesto through the cooked pasta. Add in the green beans and potatoes and stir gently. Season if necessary. Serve with lots of grated parmesan over the top.
