No Nut Banana Bread – perfect for lunchboxes!

We have just recently gone nut-free in my kids school class room and it now makes me realise how many nuts/nut products they used to eat! Its more of a challenge now and I can’t rely on peanut butter sandwiches if I have nothing else so I have become more prepared. One thing I make loads of is banana bread. I have now omitted the pecans / walnuts so its nut free! I bake it, slice it and freeze it in individual portions in those tiny Ikea food bags. I pop it in their lunch boxes frozen so it keeps everything else cool until lunchtime. Heres my recipe:

250g self raising flour

1/2 teaspoon baking powder

125g butter (at room temperature)

100g light muscovodo sugar

2 medium eggs

3 ripe bananas, mashed

1 teaspoon vanilla extract

required: 2lb loaf tin – lined (unless you use silicone which i do)

  1. Preheat oven to 180 degrees / 160 Fan.
  2. Mix together the dry ingredients. Mix together the wet ingredients and then beat them all together.
  3. Pour into your tin and pop into the oven for 45-50 minutes until golden and a skewer or cocktail stick comes out clean when inserted into the middle of the loaf!
  4. Leave to cool in the tin. Delicious!
